Domino’s Vegetarian Supreme Pizza Challenge

After a long working week I like nothing better than to order a pizza online from Domino’s and chill out with a movie. Yesterday I managed to get off work a bit earlier so I decided to challenge myself and try to make my favourite Domino’s pizza the Vegetarian Supreme and see if I could come close to making it taste like the original.

Home-Made Vegetarian Supreme Pizza Recipe (makes 1 medium sized pizza):

Ingredients for the dough:

  • 200g strong white bread flour or Tipo ‘00’ flour
  • 1/2 teaspoon golden caster sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried yeast
  • 2 tablespoons olive oil (I used a garlic infused olive oil for extra flavour)
  • 120ml warm water

Ingredients for the pizza & toppings:

  • Tomato or pizza sauce (I used Napolina Pizza Topping - Tomato Sauce With Herbs)
  • Salt
  • Pepper
  • Olive Oil
  • Onions (sliced)
  • Green peppers (sliced)
  • Sweetcorn
  • Mushrooms (sliced)
  • Plum tomatoes (cut into half)
  • Mozarella Cheese (150g)

Directions:

  1. Mix the flour, yeast and salt together in a mixing bowl and stir in the olive oil. Gradually add the water and mix well until it forms a soft dough.
  2. Remove the dough from the bowl and place it onto a flour-dusted surface and knead it for about five minutes until smooth and elastic.
  3. Put the dough in a bowl and cover it with a damp towel and leave it for about an hour until it has doubled in size.
  4. After it has risen, take the dough out of the bowl and on a flour-dusted surface knead it around to push the air out.
  5. Roll out the dough on a lightly floured work surface to form your pizza base. The thickness of the pizza base is to your discretion.
  6. Smear the tomato/pizza sauce evenly over the pizza base.
  7. Sprinkle the mozarella cheese and sweetcorn over the sauce and lay the onions, green peppers, mushrooms and plum tomatoes on top.
  8. Generously drizzle olive oil over the pizza and season with salt and pepper.
  9. Place in a preheated oven (220C, 425F, Gas Mark 7) and bake for around 10 minutes until it is crisp and golden around the edges and the cheese on the topping has melted.

After I made my pizza I called the girls around, ordered the actual Domino’s Vegetarian Supreme Pizza and got them to compare it to my own home-made creation. And the verdict?? Well I think my friends were just being nice when they said that they preferred my pizza because it apparently tasted fresher but I personally think that the Domino’s pizza won hands down as I couldn’t quite get the dough right. Oh well, next week I think I’m going to stick with a Domino’s pizza!

Tom Aikens’ Fish ‘N’ Chunky Chips Recipe

I came across a recipe today in an old copy of OK! Magazine for Tom Aikens’ version of the nation’s favourite fish and chips and thought I would share the recipe here with you :)

Serves 4

INGREDIENTS
4 King Edward or red Desiree potatoes, peeled
Oil for frying
4 x 100g / 4oz fillets of white fish such as cod or pollock
50g / 2oz flour
Lemon wedges to serve

For the batter:
300g / 11oz high-gluten bread flour
60g / 2 1/2oz cornflour
15g / 1/2oz sugar
Salt and freshly ground white pepper
500ml / 18fl oz Heineken beer
30g / 1 1/4 oz yeast

For the tartar sauce:
4 egg yolks
1/2 - 1 tsp English mustard
Salt and freshly ground black pepper
750ml / 1 1/4pt vegetable oil
Juice of half a lemon
1 tbsp white wine vinegar
75g / 3oz gherkins, drained and chopped
15g / 1/2oz fresh parsley, chopped
75g / 3oz shallots, peeled and chopped

Start by making the batter. Sieve the flour, cornflour, sugar and salt and white pepper together in a bowl. Pouring slowly, whisk in all the beer then mix in the yeast. Leave to sit for 15 minutes before using.

Cut the peeled potatoes into 1cm / 1/2inch square batons the length of the potato so they are all the same size. Rinse well to wash off the starch, then place in a pan of lightly salted water and boil rapidly for 1 minute. Drain, then immediately plunge them into iced cold water to stop them cooking any further. Dry them off well with a tea towel.

Heat the oil in a large, heavy-based pan to 150C / 275F, add the chips and blanch for 2-3 minutes, then drain. Reheat the oil back up to 180C / 350F, then plunge the chips back into the pan and cook until they are golden brown - about 3-5 minutes. Remove from the pan with a slotted spoon and sprinkle with sea salt.

Dip the fish into the flour then into the batter and then fry in the hot oil at 180C / 350F until the fish is cooked through and the batter golden and crisp.

While the fish is cooking make the tartar sauce. Whisk the egg yolks, mustard and salt and pepper together in a bowl, then slowly trickle in the oil, whisking well, until all is incorporated. You may need to add a little water to the mayonnaise as it may get too thick and split. Add the remaining ingredients, mix well to combine and spoon into a serving bowl.

Serve the fish and chips with the tartar sauce on the side and with lemon wedges for squeezing.

La Maison Du Chocolat - Chocolate Pleyel Cake Recipe

La Maison Du Chocolat - Chocolate Pleyel Cake Recipe La Maison Du Chocolat chocolates are one of the finest chocolates in the world and probably the most expensive too, where a box could set you back a few hundred pounds!  La Maison Du Chocolat has a shop in London on Piccadilly and their chocolates are also sold in Harrods in Knightsbridge.  Besides selling chocolates, they also sell a variety of macaroons and cakes.  My favourite cake is the Chocolate Pleyel Cake which costs £2.50 for a piece so you’ll be glad to know that I came across the recipe for it in the Canary Wharf Citylife magazine which I picked up whilst I was in the area last week!  I would really recommend trying out the recipe especially if there isn’t a La Maison Du Chocolat near you!

Ingredients:

200g dark chocolate
5 eggs (3 yolks - 5 whites)
190g butter
10g vanilla extract
170g icing sugar
1 teaspoon of salt
70g granulated sugar
100g flour
75g almond powder

Method:

  • Grease a 25cm cake tin and put it in the fridge
  • Break the chocolate into small pieces and place it in a glass bowl.  Heat the bowl gently by placing it over a saucepan filled with boiling water until the chocolate has melted.  Separate the egg whites from the yolks.
  • When the chocolate has melted, add the butter cut into small cubes.  Blend and then add the vanilla, yolks and icing sugar.  Mix again.
  • Add the almond powder, take the bowl off the saucepan, add the flour and mix throughly.
  • Preheat the oven to 200C (gas mark 7).
  • Beat the egg whites to stiff peaks, add the salt and then add the granulated sugar a little at a time and keep beating.  Add the egg whites to the chocolate mixture and blend well.
  • Flour the cake tin and pour the mixture into it.
  • Place the cake tin in the oven and bake for 20 minutes.
  • To check it is baked, poke the cake with the blade of a knife and if the blade comes out dry, then it’s ready.
  • Remove the cake from the oven and the tin, and leave to cool before serving.
